The origins of the spirit can be traced back to the Caribbean sugarcane plantations of the 17th Century with plantation owners squeezing the crop for every last penny, distilling the byproducts of sugarcane production into rum. Dark rums get their colour from barrels during the ageing process, white rums are typically unaged and colourless as a result.
