Spring family meal plan

As spring settles in and the days grow longer, cooking tends to shift away from heavy winter dishes towards fresher flavours and lighter dinners. It’s the perfect time to cook simple, seasonal meals the whole family will enjoy, using ingredients like spring greens and sweet new potatoes.

Our food team has created these dishes to showcase some of the best ingredients of the season. Wild garlic is a highlight for foragers and home cooks alike at this time of year – look for it in woodland areas or at farmers’ markets; its gentle garlicky flavour works well in savoury bakes, which you can prep ahead for an easy grab-and-go breakfast. Asparagus is another springtime favourite with a famously short season – it's prized for its delicate flavour and tender spears, so it’s best enjoyed while it’s at its peak.

The recipes in this plan offer plenty of variety to keep everyone happy. The creamy coconut dumpling traybake is an easy one-pan vegetarian dinner, while miso leek & potato soup with sesame cheese dunkers makes a comforting midweek meal. Cauliflower roasted in anchovy butter with orzo packs in plenty of umami flavour, while the chicken, butter bean & spring greens traybake with herby salsa verde is a hearty family dinner that requires minimal prep. For cosy comfort, the eat-your-greens mac & cheese sneaks plenty of vegetables into a family favourite.
